Peach Preserves

Bright, sun-ripened peach preserves with a thick, glossy set that holds up beautifully in the jar. Clear Jel gives these preserves a clean, clear look that traditional pectin can't match.
Ingredients
- β’4 cups peeled, pitted, chopped fresh peaches (about 8 medium)
- β’2 cups sugar
- β’ΒΌ cup Crave Clear Jel Powder (cook-type)
- β’2 tbsp fresh lemon juice
- β’ΒΌ tsp almond extract (optional but wonderful)
- β’ΒΌ tsp cinnamon
- β’Pinch of salt
Instructions
- 1Sterilize 6 half-pint jars and keep hot. Prepare lids and bands.
- 2In a large heavy-bottomed pot, combine peaches and 1Β½ cups of the sugar. Let macerate 30 minutes to draw out juices.
- 3In a small bowl, whisk remaining Β½ cup sugar with Crave Clear Jel Powder until combined.
- 4Bring the peach mixture to a boil over medium-high heat, stirring frequently.
- 5Gradually whisk in the Clear Jel and sugar mixture, stirring constantly to prevent lumps.
- 6Add lemon juice, almond extract if using, cinnamon, and salt. Stir well.
- 7Return to a full rolling boil and cook 2 minutes, stirring constantly, until thick and glossy.
- 8Ladle into hot jars, leaving ΒΌ-inch headspace. Process in boiling water bath for 10 minutes.
