Peach Preserves

Bright, sun-ripened peach preserves with a thick, glossy set that holds up beautifully in the jar. Clear Jel gives these preserves a clean, clear look that traditional pectin can't match.

Ingredients

  • β€’4 cups peeled, pitted, chopped fresh peaches (about 8 medium)
  • β€’2 cups sugar

Instructions

  1. 1Sterilize 6 half-pint jars and keep hot. Prepare lids and bands.
  2. 2In a large heavy-bottomed pot, combine peaches and 1Β½ cups of the sugar. Let macerate 30 minutes to draw out juices.
  3. 3In a small bowl, whisk remaining Β½ cup sugar with Crave Clear Jel Powder until combined.
  4. 4Bring the peach mixture to a boil over medium-high heat, stirring frequently.
  5. 5Gradually whisk in the Clear Jel and sugar mixture, stirring constantly to prevent lumps.
  6. 6Add lemon juice, almond extract if using, cinnamon, and salt. Stir well.
  7. 7Return to a full rolling boil and cook 2 minutes, stirring constantly, until thick and glossy.
  8. 8Ladle into hot jars, leaving ΒΌ-inch headspace. Process in boiling water bath for 10 minutes.
