Homemade Apple Pie Filling (Canning Safe)

A thick, perfectly spiced apple pie filling that's safe for water-bath canning. Clear Jel is the only starch approved for home canning — it creates a stable, clear gel that won't break down during processing.
Ingredients
- •12 cups peeled, cored, sliced apples (about 9 medium)
- •2¾ cups sugar
- •¾ cup Crave Clear Jel Powder (cook-type)
- •1½ tsp cinnamon
- •¼ tsp nutmeg
- •½ tsp salt
- •2½ cups apple juice or water
- •1¼ cups cold water
- •½ cup bottled lemon juice
Instructions
- 1Sterilize 7 quart jars and keep them hot. Prepare lids and bands according to manufacturer's instructions.
- 2In a large pot, combine sugar, Crave Clear Jel Powder, cinnamon, nutmeg, and salt. Whisk together.
- 3Add apple juice and cold water to the dry mixture. Stir until the Clear Jel is fully dissolved.
- 4Cook over medium-high heat, stirring constantly, until the mixture thickens and begins to bubble.
- 5Add lemon juice and stir well. Fold in the sliced apples.
- 6Return mixture to a boil, stirring gently, for 1 minute.
- 7Ladle hot filling into hot quart jars, leaving 1-inch headspace. Remove air bubbles.
- 8Wipe jar rims clean. Apply lids and bands finger-tight.
- 9Process in a boiling water bath canner for 25 minutes. Remove and let cool 12–24 hours before storing.
