Homemade Apple Pie Filling (Canning Safe)

A thick, perfectly spiced apple pie filling that's safe for water-bath canning. Clear Jel is the only starch approved for home canning — it creates a stable, clear gel that won't break down during processing.

Ingredients

  • 12 cups peeled, cored, sliced apples (about 9 medium)
  • 2¾ cups sugar
  • ¾ cup Crave Clear Jel Powder (cook-type)
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 2½ cups apple juice or water
  • 1¼ cups cold water
  • ½ cup bottled lemon juice

Instructions

  1. 1Sterilize 7 quart jars and keep them hot. Prepare lids and bands according to manufacturer's instructions.
  2. 2In a large pot, combine sugar, Crave Clear Jel Powder, cinnamon, nutmeg, and salt. Whisk together.
  3. 3Add apple juice and cold water to the dry mixture. Stir until the Clear Jel is fully dissolved.
  4. 4Cook over medium-high heat, stirring constantly, until the mixture thickens and begins to bubble.
  5. 5Add lemon juice and stir well. Fold in the sliced apples.
  6. 6Return mixture to a boil, stirring gently, for 1 minute.
  7. 7Ladle hot filling into hot quart jars, leaving 1-inch headspace. Remove air bubbles.
  8. 8Wipe jar rims clean. Apply lids and bands finger-tight.
  9. 9Process in a boiling water bath canner for 25 minutes. Remove and let cool 12–24 hours before storing.
